::WARNING::
Unlike cooking – you must be very very very careful when measuring or changing ingredients when it comes to baking. When you’re cooking- adding more salt, hot sauce, parsley (etc.) won’t make a huge difference. With baking – small changes like these can make ALL the difference. In school I have learned that baking is a science. It's very technical and very precise. One measuring mishap and BAM - horrible goods. Unless you know what you're doing- pay attention!

[[Today's muffin recipe]]

MINI SUGAR DONUT MUFFINS

[[She's got that look of a muffin but taste like a donut...]]

::Ingredients before baking:
3/4 cups sugar
1 egg
1 1/2 cups all purpose flour
(I usually use whole wheat flour, but it's whatev)
2 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
1/4 cup vegetable oil
3/4 cup milk
(I usually use fat free, but once again, it's whatev)
1 tsp vanilla extract

::Ingredients after baking::
2 tablespoons melted butter (for dipping)
1/2 cup sugar (for rolling)
1 tablespoon cinnamon (for rolling)


::Directions::

--Pre-heat oven to 350 degrees
--Grease muffin tin (large or small) with cooking/baking spray or oil.
--Cream sugar and egg in a large bowl until light and fluffy
-- In a small bowl mix the flour, baking powder, salt, and nutmeg
--Combine the dry mixture slowly into the wet mixture until well blended (be careful not to over mix)
--Add in vegetable oil, milk, and vanilla extract to the wet & dry mixture.
--After this is well blended, pour into muffin tins- filling each about 3/4 full.
--Bake muffins for 10-15 minutes (check at 10- if the muffins spring back to the touch then they're ready)

::LET MUFFINS COOL::

--Melt butter in a small bowl in the microwave (30-40 seconds should suffice)
--In the meantime mix together the sugar and cinnamon in a small bowl
--Once the muffins are cooled dunk the tops of them in the melted butter
-- Next- roll the buttered muffin in the cinnamon sugar mixture

And there you have it! Mini-sugar-donut-muffins!
(Goes great with a hot cup of coffee or a cold glass of milk)
